Monday, June 8th. 339.0 pounds. That's 9.8 pounds GONE in the first week! WOO-HOO! My stomach growls as I type, and it makes me so proud! :) Go, me!
Last night, I made the MOST DELICIOUS salmon burgers. Find the recipe here:

The recipe makes 4 burgers. I could not find fresh dill, so I used the dried spice and only one tablespoon for the mayo instead of two. One was enough for my taste. I used light mayo which is 45 calories per tablespoon. Each burger is 250 calories...that's ALL! Add a whole wheat bun - mine are 220 calories each, an additional tablespoon of dill mayo (45 calories), and some lettuce (15 calories, and that's being generous) and the entire burger is only 530 calories! :) And did I say, "DELICIOUS"? DELICIOUS! I served 1 cup of steamed brown rice and 1 cup of lentils on the side (rice 170, lentils 150) and dinner start to finish was only 850 calories.
NEWSFLASH: A NEW TRICK!
I've started eating cereal, yogurt, rice, etc. with a little red ceramic 1/4 teaspoon. It looks completely bazaar, but I'm not one to worry about things like that. Eating with such a small spoon forces smaller bites, and a LOT more of them, so I eat more slowly and feel like I've eaten a lot more! It's been a very helpful new trick!
